Coconut and Cranberry Chocolate Bites

These little bites are seriously so good, the cranberry and coconut just go together so well. I know these aren't as healthy but sometimes something sweet is just needed! Like the other day, I came back from work and was really craving a biscuit, instead I just took one of these and it totally subsided it. I tried using the minimal chocolate and added lots of seeds, nuts and dried fruit, so although there's chocolate in it there's lots of good stuff in it too.

Makes 12

INGREDIENTS
100g dark or milk chocolate
75g rice krispes
25g cranberries
25g desiccated coconut
25g pumpkin seeds
1 tablespoon poppy seeds

DIRECTIONS

1. Add water into a small saucepan until it boils, then put on low heat
2. In a bowl crack the chocolate and place bowl over saucepan
    (make sure the bowl doesn't touch the water in the pan)
3. In a different bowl, add the remaining ingredients and mix
4. When the chocolate is fully melted, leave aside to cool down
5. When cooled down add to the rice krispes bowl and mix
6. Put the mixture into a baking tray
7. Put the tray into the fridge for a few hours or until set
8. Cut into 12 pieces and enjoy
