Banana and Citrus Smoothie

Now, this smoothie may not look very colourful but I can assure you it's just as yummy!  First there's a nice citrus taste and then it gets taken over by a sudden nutty flavour, so good. I used some oranges and a lime but I'm sure any other citrus fruit will work well in this, next time I'm going to try lemons and satsumas!

I recently discovered linseed, there's a brown version and a golden version. I'm not quite sure what the difference is but I decided to pick the brown ones. I absolutely love them and I've been adding them to literally everything! To my breakfast, in my smoothie and even salads, they have good health benefits and add flavour so why not, right?

Vegan Chickpea Patties

These vegan chickpea patties are seriously so good! I tried making these once before and they didn't come out right at all, they were still tasty but way too brittle and I found it quite hard eating it. So when I made them yesterday I made a few changes. I added a flax egg instead of no egg and left the mixture in the fridge for a while and it worked! They were still brittle but not so much that they would break while holding them. I had mine plain with some salad, but they would be so good in a wholemeal bun with some greens and tomatoes, yum. I need to make sure I have buns at home before making them again!

4 Ingredient Almond Energy Balls


Don't these energy balls look so good? They taste pretty good too and they remind me a bit of a Ferrero Rocher, I should totally try making some energy balls inspired by them! I can already taste it, yum. What I love about these is that they're so easy to eat, probably because my brain thinks I'm eating some kind of junk food haha.

Most times I can control myself but sometimes I get this big craving to eat chocolate or something sweet. And I just end up going for that chocolate or sweet thing. I haven't really found anything healthy that can make up for it, until now! Ever since making them I feel that these energy balls can tame any sweet cravings I have! They're so rich and sweet but good for the body and really filling too. I have to start hiding them, they disappear way too fast in my house!

Goji Berry and Blood Orange Smoothie

I know goji berries have really good health benefits, but there's one problem: I find it hard eating them. So the simplest thing to do in this kind of situation is to add it to a smoothie! Who's with me? The benefits will still be there but none of that goji berry flavour. I've only ever tried dried goji berries so maybe the non dried version tastes different, I'll have to try it sometime! 

Anyways, when I was thinking about making this smoothie, somehow my head imagined it to be a red so I was surprised when it turned out to be orange! I should have realised that red and yellow ingredients will of course make an orange smoothie. 

Let's move on to that blood orange, it was such a lovely colour when I juiced it, sort of a coral colour. I would totally make a banana and blood orange smoothie just for that gorgeous colour! I also added some sourness with the lemon which worked really well, lemon actually has natural fat burning properties so it's a good smoothie to help keep in shape!

Couscous with Roasted Vegetables

Couscous is a great alternative for rice and pasta and the possibilities are endless. What I love about it is that it's fast to prepare and works well with anything! It's also the perfect thing to take for lunch, when I'm feeling a bit tired but still have lunch to prepare I just pick this. I usually just add last nights curry or some kind of soup (mostly lentil soup, so yum!) alongside some chopped raw vegetables. 

Sure, that's quick and easy but I was looking for something new to try that's also quick and easy. I roasted some red pepper and courgette and made an onion based couscous, and the end result? It was so good! I was actually surprised, because normally when I make something new I somehow get it wrong and have to try it again. But this time, it was just the way I wanted!

Most of my family don't eat the couscous I make, so when I made this I only made two lots so I could have some the next day. But no, it just wan't meant to be, it must have looked good because everyone tried it and there was none left for me!
